The wheat berries are organic hard white wheat.
To soak: Put 3 cups wheat berries and 3 Tbsp apple cider vinegar in a glass dish. Cover with water and let sit overnight or for about 12 hours. Rinse grains using a fine mesh strainer and allow to dry COMPLETELY before grinding into flour. (Wet grain will damage your grinder)

Sprouted Wheat Sourdough Bread
1/2 cup active sourdough starter
2 tsp salt
2 1/2 cups warm water
5+ cups sprouted wheat flour
Mix together starter, water and salt then add 5 cups flour. Begin kneading in more flour until dough is no longer sticky. Knead until dough passes window pane test. (You can stretch a quarter sized amount between your fingers and see light through it when you hold it up to the light, without the dough breaking.)
Shape into two loaves and set in greased pans. Cover with a damp towel and allow to rise in a warm place for 3 hours. Bake at 375 for 30-35 minutes.
Cool, slice and serve!
